Lincoln’s Version of the Spud Man is Coming to Cornhill Market
Following on from the success of viral TikTok sensations Spud Man and Spud Bros, a female entrepreneur from Horncastle has decided to set up her own jacket potato business in Lincoln’s Cornhill Market.
Twenty-year-old Evie Capps has over eight years’ experience in hospitality having previously worked at several local pubs and cafés.
Evie was inspired to set up the Spud Stop after seeing the popularity of TikTok stars Spud Bros in Preston and Spud Man in Tamworth.
“I initially wanted to open a coffee shop,” she explained, “but I noticed jacket potatoes are really popular at the moment, and I thought, why not give it a go? After all, who doesn’t like jacket spuds – they’re so versatile!
“I also really enjoy serving the public so setting up a hospitality business was a no-brainer for me.”
Evie will be mostly running the business on her own with the help of family and friends including her 16-year-old sister Libi who will be helping during school holidays.
The Spud Stop will be opening at Cornhill Market on 9th July. Market Manager Rebecca Taylor said it’s welcome news.
“We have some fantastic local independent businesses in the market already selling international cuisine including Thai, Korean and Nepalese but jacket potatoes are something we are missing,” explained Rebecca.
“I think the Spud Stop will be a fantastic new addition and will hopefully attract more people working or shopping in the city who want a fast, fresh and delicious lunch.”
Rebecca said she hopes it will also encourage more small business owners to rent a stall.
“We want the Cornhill market to be the home of small independent businesses in Lincoln. We offer flexible lease terms and affordable rates for permanent and temporary stallholders as well as free business advice.
“Whether you’re an artisan baker, a jeweller, a retailer or a seamstress, the Cornhill Market is the perfect place for you to showcase your products and grow your business.”
Evie said she can’t wait to move in: “Renting a stall in the market is affordable considering it’s in the city centre. It’s a beautiful building and there’s plenty of space for customers to sit and eat in a safe and clean environment. There are also lots of other fantastic food stalls, so I’ll be in good company.”
Rather than a set menu, customers will be able to choose from a wide range of fillings to create their own flavour combinations including classics such as beans and cheese as well as more premium fillings such as Coronation chicken and chicken tikka. There will also be a range of butters, toppings, sauces and hot and cold drinks.
Evie said she will be gradually expanding the menu to cater for different dietary requirements.
“I’ve already received requests for vegetarian and vegan options such as jackfruit chilli and vegetable curry,” she said.
“I’m also thinking of having a ‘Spud of the Week’ such as mac ‘n’ cheese or English breakfast and will be asking for suggestions.”
Prices will start from £4.50 for small jacket potato and £5.50 for a large which will be a spud and a half.
